From mid-May, our bees are located in the “Cape Spatha” area (Chania – Crete), altitude 400m. A dry rocky landscape from which one can gaze at the endless blue sea from every side. In this scenery is wild thyme, which is a humble silvery shrub that doesn’t catch the eye until it’s filled with purple flowers. Its aroma and the color it gives to the dry summer landscape testify to its participation in the smell of the Cretan summer!
The Mediterranean climate, rare biodiversity and endemic vegetation make Cretan thyme honey, with its high nutritional value, one of the best honeys in the world.

Thyme honey is rich in :

• • Minerals and trace elements (magnesium iron, zinc, manganese, phosphorus, potassium, boron, silicon)
  • Flavonides

Flavonides are antioxidants that neutralize free radicals and act as protective molecules to keep cells healthy, prevent diseases and make the skin glow.

Thyme honey has tonic and antiseptic properties. It is particularly suitable for supporting the immune and respiratory systems and for treating coughs and bronchitis.

High-quality honey thickens over time. Turn the crystallized honey back into a liquid by placing the jar in hot water (or a oven), up to 40 degrees Celsius.
