Cape Spatha in Chania, Crete, lies at an altitude of 400 metres and has a dry, rocky landscape overlooking the sea. Alongside thyme grows the wild Malotira, also known as Kalokoimithia or Ballota. Every May, the bees are transported to this area to collect a very special honey with a golden-yellow colour that can gradually turn bright red over time.

It is rich in

  • Amino acids

High-quality honey naturally crystallises over time. To return it to a liquid state, place the jar in warm water at a temperature of up to 40°C.
